It’s been quite a minute since I have done a newsletter. I’m working on being more consistent. In this newsletter I want to encourage fall wellness as well as share some simple recipes to get you started. There is a lot of Fall content coming your way. Happy Fall y’all!!

Simple Fall Soup: Butternut Squash & Apple Soup

Why it works: Creamy, naturally sweet, and warming—plus it’s easy to make in big batches.

Ingredients:

  • 1 butternut squash (peeled, seeded, cubed)
  • 2 apples (peeled, cored, chopped—Honeycrisp or Gala work great)
  • 1 small onion (chopped)
  • 2 cups vegetable broth
  • 1 cup water
  • 1 tsp cinnamon
  • Salt and pepper to taste
  • Optional: a splash of coconut milk or cream for richness

Instructions:

  1. Sauté onion in a large pot until soft.
  2. Add squash, apples, broth, water, and cinnamon.
  3. Bring to a boil, then simmer until squash is tender (about 20 minutes).
  4. Blend until smooth. Add salt, pepper, and optional cream.
  5. Serve warm with crusty bread or pumpkin seeds on top.

Simple Fall Dessert: Maple Glazed Baked Pears

Why it works: Elegant, minimal prep, and naturally gluten-free. Smells amazing while baking.

Ingredients:

  • 4 ripe pears (halved and cored)
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • Optional: chopped walnuts or granola for crunch

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Place pear halves cut-side up in a baking dish.
  3. Drizzle with maple syrup and sprinkle with cinnamon.
  4. Bake for 25–30 minutes until tender and caramelized.
  5. Top with nuts or granola before serving.
